Gluten-Free Cheese Blintzes

So I purchased The Gluten-Free Bible cookbook from Barnes and Noble a couple months ago and there are seriously some bomb recipes in there. These cheese blintzes were no exception. They truly are one of the best gluten-free things I've eaten! They tasted like a real life crepe, and for a girl like me? That's awesome!

Here's the recipe:

-1 cup rice flour
-1/4 teaspoon salt
-1/4 teaspoon nutmeg
-1 cup half-and-half
-3 tablespoons butter, melted, divided
-1/2 teaspoon vanilla
-3 eggs
-1 container (15 ounces) ricotta cheese
-2 tablespoons powdered sugar
-1 teaspoon vanilla
-Your favorite jam

-Combine dry ingredients in bowl, gradually mix in half-and-half until smooth
-Add 2 tablespoons butter and vanilla. Whisk in the eggs and mix until batter is consitency of heavy cream.
-Heat nonstick skillet over medium heat and brush with remaining butter. Pour about 1/4 cup batter into pan and swirl the pan to coat with batter. Cook about one minute or until edges look dry. Turn and cook for another 30 seconds.
-Meanwhile, mix ricotta cheese, powdered sugar and vanilla in a medium bowl. Fill the crepes with the heavenly ricotta concoction. Top with jam and powdered sugar. 

Easy peasy! Man, I gotta go make more now...
